Canopy is a year-round home, garden and café destination just north of Saratoga Springs in Wilton, New York. Come for coffee, stay for the greenhouse, the garden, the workshop on the calendar, or the squirrel who unofficially runs the place.

The building

Timber, glass and a greenhouse full of light.

The first thing most visitors notice is the structure itself — oversized post-and-beam timbers overhead, clerestory windows pulling daylight down into the café, and greenhouses that keep the whole space green and warm no matter the season. It has a scale and craftsmanship that's hard to picture until you're standing under it.

Every visit can be as simple as a drink to go, or as full as an afternoon spent with your hands in the dirt.

The café menu is built for customizing — espresso drinks, house coffee and seasonal specials, with a full range of syrups and milk options so your order comes out exactly the way you like it.

Pot something at the Plant Bar

Choose a small plant, a pot and a scoop of soil, and pot it up on the spot with help from the team whenever you want it. A favorite for a slow afternoon or a first plant of your own.

Pour a candle at the Candle Bar

Pick a scent and a vessel and pour your own candle to take home. It's a simple, hands-on stop that pairs naturally with a coffee and a walk through the greenhouse.

A curated mix of gifts, home goods, local makers and seasonal finds — the kind of shop that rewards wandering rather than a quick pass through.

Join a workshop or event

Canopy regularly hosts classes, seasonal markets and community gatherings — candle making, plant care, holiday vendor days and more. Ask the team what's coming up next.

Watch the wildlife while you sip.

Bird feeders outside draw a steady stream of visitors throughout the day, and the resident squirrels have more or less claimed the grounds — including Carl, Canopy's unofficial mascot and the namesake of a regular customer favorite on the drink menu.
